Gyokuro is the finest grade of Japanese green tea. It has a sweet flavor, with a unique mildly astringent aroma and mellow umami taste. Gyokuro is a top-quality Sencha that requires a special cultivation method where the tea leaves are completely shaded from direct sunlight for around 20 days before the harvesting, which takes place in spring. Compared with sencha, Gyokuro tends to be smoother, more full-bodied, and less astringent. Gyokuro is also much richer than sencha in umami, due to its high levels of theanine. Thanks to the shading process, the rate of photosynthesis is significantly reduced, and less theanine gets converted to other compounds.

Directions

1 1/2 tsp per 8oz/200ml of hot water @ 80°C/175°F for 2-3 Minutes. A sweetener like sugar or honey can be added as per taste. We also encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength.
